What is Socca (Farinata)?
Socca is a flatbread from French. In Italy they named it: Farinata. Its made of chickpea flour.
- 200g chickpea flour
- 200ml water
- 160ml olive oil
- 4g rosemary
- Pinch of pepper
- Pinch of salt
- 1 sweet potato
- 30g hazelnuts
- 100g kale
- 1 garlic clove
- 8g sage
- 80g goat cheese
- Prepare the batter: mix the chickpea flour with the water, 20ml olive oil, rosemary and peper and salt. Mix until the batter is smooth. Let it rest for 30 minutes.
- Preheat the oven to 200 degrees.
- Use a round oven dish. Add 20ml olive oil. Pour the batter in the frying pan till the bottom is covered. Bake the socca for 5 minutes till the edges turns brown.
- Slice the sweet potato as thin as possible. Bake them for 4-5 minutes with 20ml olive oil in a frying pan.
- Brown the hazelnuts in a dry pan for 2-3 minutes till they are light brown.
- For the kale pesto: mix the kale, olive oil, hazelnuts, garlic, pepper and salt in a mixer or blender.
- Put the sweet potato on the socca together with the goat cheese and sage. Add some extra kale for crispness.
- Put the socca in the oven for another 4-5 minutes. The socca should be cripsy on the outside and soft from the inside.
- Take the socca out from the oven and put some kale pesto over the socca. Ready to serve!
