Sardines & lemon

Serves: 2

  • 6 sardines
  • 120ml olive oil
  • 4 sprigs rosemary
  • 3 garlic cloves
  • 1 lemon
  • 4 sprigs rosemary
  • 5 sprigs dill
  • 5 sprigs parsley
  • 1 red onion
  • 120g tomatoes
  1. Clean the sardines. Transfer them in an oven tray.
  2. Cover them with 20 ml olive oil, rosemary sprigs, garlic cloves and sliced lemons.
  3. Prepare the grill (or BBQ) or the oven to 180 degrees celsius .
  4. Cook the sardines in 2-3 minutes on each side.
  5. In mean time make the salsa verde. Mix 100ml olive oil, lemon juice, roughly chopped parsley and dill. Spice up with a pinch of pepper & salt.
  6. Cut the tomatoes and the red onion finely. Mix with the salsa verde.
  7. Serve the salsa with the sardines.
