Serves: 2
- 6 sardines
- 120ml olive oil
- 4 sprigs rosemary
- 3 garlic cloves
- 1 lemon
- 4 sprigs rosemary
- 5 sprigs dill
- 5 sprigs parsley
- 1 red onion
- 120g tomatoes
- Clean the sardines. Transfer them in an oven tray.
- Cover them with 20 ml olive oil, rosemary sprigs, garlic cloves and sliced lemons.
- Prepare the grill (or BBQ) or the oven to 180 degrees celsius .
- Cook the sardines in 2-3 minutes on each side.
- In mean time make the salsa verde. Mix 100ml olive oil, lemon juice, roughly chopped parsley and dill. Spice up with a pinch of pepper & salt.
- Cut the tomatoes and the red onion finely. Mix with the salsa verde.
- Serve the salsa with the sardines.
